Considered one of Greece’s national dishes, fasolada embodies the country’s frugal yet healthy essence in just one bowl. This hearty meal is made with a combination of white beans, chopped vegetables, extra virgin olive oil, herbs, and tomato sauce. Fasolada is a robust dish meant to last for days. Pair it with a salty side, like anchovies or your favorite olives, and always serve with fresh, crusty bread.
Fasolada is also one of the best vegan and Lenten-friendly dishes you can enjoy. Nothing says a Lenten meal quite like a bowl of fasolada on the table—it’s a staple that’s not only healthy but deeply satisfying. Of course, after a few weeks into Lent, it might start to feel a bit repetitive, but I still love it!
