But there are two absolute must-haves in this sandwich: the pickled green tomatoes (obviously) and the goat cheese spread. The goat cheese spread is a game-changer. I like to mix in pimento olives and jalapeños for a little briny flavor with a touch of heat. But this spread is incredibly versatile—you could swap in roasted red peppers, a bit of diced shallot, or even add fresh herbs like dill or chives.

Cut your green tomatoes into slices or wedges. In a saucepan, combine 1 cup water, 1 cup vinegar (white or apple cider), 1 tablespoon kosher salt, and 1 tablespoon sugar.
