It doesn’t matter where I eat, my eyes always race down the menu for any mention of something spicy. When in Greece, finding something spicy to eat at a Greek taverna isn’t easy, but one standout option is tirokafteri, meaning “hot cheese.” This classic Greek dip can be made in two ways: the well-known white version and the red version. The white version is particularly appealing due to its simplicity and rich, creamy texture. Made with feta cheese, Greek yogurt, and a splash of extra virgin olive oil, this version highlights the natural tanginess of feta while achieving a smooth consistency. It requires few ingredients, making it quick and easy to prepare while still delivering a satisfying spicy kick from the peppers you add. Tirokafteri pairs wonderfully with pita chips, grilled meats, vegetables, or even spread on sandwiches. However you serve it, tirokafteri promises a delightful heat that complements many dishes.



Ingredients:
4 spicy peppers, seeded and chopped (pick white, yellow or green peppers here–such as serranos, banana peppers, or chili peppers)
¾ cup extra virgin olive oil, or more as needed
16 ounces feta cheese
3 tablespoons plain Greek yogurt
1 tablespoon lemon juice
Salt and pepper, to taste
Directions:
1. Deseed and roughly chop the peppers. Heat 3 tablespoons of the olive oil in a frying pan over medium heat. Add the chopped peppers and minced garlic, and sauté until the peppers are softened and the garlic is fragrant. Remove from heat and let cool for about 10 minutes.
2. Cut the feta into chunks and place them in a food processor or mixer. Add the yogurt, lemon juice, and the sautéed peppers and garlic along with the oil from the pan.
3. Mix everything together in the food processor until smooth. With the processor or mixer on medium speed, gradually add the remaining olive oil. Taste and adjust the seasoning by adding freshly ground black pepper and more yogurt if the dip is too salty. If you want extra heat, add red pepper flakes.
4. Transfer the dip to a bowl, garnish with freshly chopped herbs (such as dill or oregano), and serve with pita bread, vegetables, or crackers.
