I chose to share a tomato-only version of yemista because tomatoes are hands-down my favorite (though I know plenty of people who claim peppers are the real star — no judgment!). This version skips the meat and lets the herbs, olive oil, and rich tomato flavor shine.
Yemista refers to any Greek dish where vegetables are stuffed — most often with rice, herbs, and sometimes meat — and then baked until soft and flavorful. In tavernas across Greece, it's a go-to comfort dish, and every time I eat it, I wonder how I ever spent years hating tomatoes.
